Natura raw bacon
Hearty alpine snack: hardly any other meat specialty represents our concept of traditional fare better than does delicious Natura raw bacon, which is air-dried in the mountains of Grisons.
Produced from tender pork belly cuts, Natura raw bacon is first marinated for three to four weeks in a special seasoning mixture. It is then hung to air-dry for seven to nine weeks, during which it loses around 35 per cent of its original weight. This intensive ageing phase is what gives the raw bacon its unique tangy note.
