Bündner specialties with a slice of bacon: coppa. If you cut open Bündner coppa, you will find a small strip of bacon. This is what gives our Natura coppa its intense flavour.
Natura coppa is produced from firm, fat-streaked pork neck. This Swiss raw material is first pickled for three to four weeks in an herbal mixture before being hung in a stocking for two to three months for dry ageing. Pressing the meat twice creates a compact end product which stands out with its intense red colour.
